Since 2016

One oven, one market run, one menu.

Oliva began as a seven-table room above a greengrocer. We cook over oak and olive wood, buy from three growers at Borough Market, and change the menu when the produce tells us to — usually twice a week.

No gas, no foams, no shortcuts. Everything that reaches the pass has been touched by fire. The pasta is rolled at 10am, the bread is baked at 4pm, and the last embers are raked at midnight.

How we cook

The four rules of the pass.

01

Wood, always

Oak for heat, olive wood for perfume. The oven holds 400°C and gives every plate a smoke line you cannot fake in a pan.

02

Bought that morning

Three growers, one fishmonger, one dairy. If it is not at the market, it is not on the menu — that is why the card changes twice a week.

03

Handmade daily

Pasta rolled at ten, focaccia proved and baked at four, burrata torn at five. Small batches, made once, never held over.

04

Nothing wasted

Trim becomes stock, stock becomes the base of tomorrow's ragù, bread becomes the crumb on the monkfish. Kitchen waste leaves under 4kg a week.

The room

Low light, oak floors, and a long table.

A former grocer's shop on Elizabeth Street, stripped back to brick and dressed in oak. The cellar below holds 340 Italian labels, most under £60.
